I wouldn't worry too much about flying debris from rollover. The average trail flop is pretty low energy. A conscientious strap down of your stuff in a duffel is fine for almost everything. You can strap down a CO2 bottle. Just remember to put it upright before you use it.

I recommend to put all weight as low as possible. It adds up quickly and makes a difference in how the vehicle drives when you start to get off camber. If you don't have people in the back seat, consider to use the rear footwell preferentially. You can put duffel bags in there and run ratchet straps across to hold them down. If you put the heaviest stuff the lowest, it'll raise your center of gravity the least.

In a high energy wipe-out, you won't be missing the mounting brackets your stuff could have been held in as much as the cage said brackets should have been bolted to.
